Our family

In the Aguilar family, the history of olive oil is also the history of our lives. For generations, we have worked with Sevillian olives through a unique blend of respect, tradition, and a forward-looking mindset. We have inherited the knowledge of those who, in the early 20th century, already “pampered” each fruit with patience and expertise, relying on the Master Curer to decide every step of the seasoning and fermentation process.

Today, we remain faithful to that legacy. Family experience combines with modern technical resources to ensure that every stage —from the natural removal of oleuropein to the control of lactic fermentations— preserves the authenticity of our origin. This meticulous and honest way of working is what has strengthened long-lasting relationships with customers who truly value quality.

Our olive trees

The olive trees of Robaina are the heart of our story. They are born and grow on carefully tended Sevillian land, where we continuously oversee the entire olive-growing cycle: from fruit development to harvest. Each tree is part of our heritage and represents a way of understanding agriculture based on patience and respect for the natural rhythm of the land.

The transformation of the olive begins the moment it comes into contact with the brine. During the first days, the pH —above 10— initiates a living and complex process in which various microorganisms shape each phase of the fermentation. As days go by, the pH naturally decreases to values close to 4, ensuring optimal preservation and a stable, authentic flavour.

This deep understanding of the fruit—its timing and its behaviour—allows us to obtain an oil that remains faithful to its origin. An oil that reflects the character of our olive trees: strong, honest, and full of identity.
